EASY GRILLED CHICKEN CAPRESE

with Koch Foods Chicken Breast Fillets

You’ll savor every last bite of this easy-peasy Grilled Chicken Caprese, which combines the appetizer and main course into one memorable meal. It’s a fresh caprese salad made with Antonio Mozzarella Factory Fresh Mozzarella, fresh tomato and basil all on top of a charred, smoky grilled Koch Foods chicken breast fillet. Drizzle on a balsamic reduction made with Divina Extra Virgin Olive Oil, Cavalli Classico Balsamic Vinegar and our Maple Syrup. Buon Appetito!

Ingredients list:
  • Balsamic Reduction:
  • 1 tsp. Divina Extra Virgin Olive Oil
  • 1 clove garlic, minced
  • 1/2 cup Cavalli Classico Balsamic Vinegar
  • ¼ cup Red Wine
  • 1 tbsp. Oberweis Maple Syrup
  • pinch of salt
  • Grilled Chicken:
  • 4 Koch Foods Chicken Breast Fillets
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • Grilling Spray
  • 4 oz Antonio Mozzarella Factory Mozzarella Ball, cut into ½ inch slices
  • 1 tomato, sliced
  • Fresh basil leaves, sliced thin or torn

  1. Add olive oil and minced garlic to a saucepan over medium heat and cook for one minute.
  2. Pour vinegar, red wine, and maple syrup into a saucepan then bring to a boil. Reduce heat to medium then simmer until it has thickened- about 10-12 minutes. Set aside.
  3. Heat your grill up to high heat. Season chicken breasts on both sides with salt and pepper, and spray with grilling/cooking spray. Turn the grill down to medium-high heat and cook with lid closed for 6 minutes on the first side and 4 minutes on the second side.
  4. Add one slice of fresh Mozzarella to each piece of chicken and continue to grill with the lid closed for 2 more minutes or until temperature of the chicken reads 165 degrees. (The cheese should melt and cover the chicken, but watch closely to make sure it doesn't melt too much and slide off.) Remove chicken from the grill and allow to rest 5 minutes.
  5. Place chicken on each plate, top with the tomato and balsamic sauce, and sprinkle with lots of torn or sliced basil leaves.
