GRILLED MANGO SHRIMP SALAD

with Xtraordinary Whites Shrimp

This Grilled Mango Shrimp Salad is full of flavor and super nutritious! On a bed of chopped lettuce leaves, we added cubed mangoes, cherry tomatoes, onion, garlic, cilantro, and grilled Xtraordinary Whites shrimp doused with the satisfying tang of Natalie’s Lime Juice. Top with Divina Extra Virgin Olive Oil and a dash of salt and pepper. Shrimply delicious!

Ingredients list:
  • 12 oz. Xtraordinary Whites Shrimp
  • 1 tsp. Divina Extra Virgin Olive Oil
  • Salt and fresh ground pepper, to taste
  • 1 tbsp. Natalie’s Lime Juice
  • 1 ripe mango, peeled and cubed (you can also use frozen mango chunks, thawed)
  • 1 cup halved cherry tomatoes
  • 1 small red onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp. chopped fresh cilantro
  • 3 tbsp. Natalie’s Lime Juice
  • 4 cups chopped lettuce leaves

  1. In a mixing bowl, combine shrimp, olive oil, salt and pepper; toss to combine.
  2. Preheat a grill pan over medium-high heat.
  3. Add shrimp to grill pan and cook for 2 to 3 minutes, or until cooked through.
  4. Remove shrimp from pan and toss with lime juice; set aside.
  5. In a mixing bowl, combine cubed mangoes, cherry tomatoes, onion, garlic, cilantro, salt, pepper and lime juice; toss to combine and let stand 20 minutes.
  6. Layer chopped lettuce leaves on a large serving plate or in a salad bowl; add mango mixture over the lettuce.
  7. Top with grilled shrimp.
  8. Squeeze lime juice over the entire salad and serve.
