Ingredients list:
  • 20 oz. Nuovo Pasta Sacchetti Four Cheese
  • 1 cup Seal the Seasons North Carolina Cut Spinach
  • 3 oz. Volpi Genoa Salame Chub
  • 1 cup Volpi Pepperoni Nuggets
  • 1/4 Cup Divina Kalamata Olives, sliced
  • 1 cup Antonio Mozzarella Factory Ciliegine Cup
  • ½ Cup Oil Packed Sun Dried Tomatoes
  • ½ Cup Balsamic Salad Dressing
  • ¼ Cup Sartori SarVecchio Parmesan Cheese, grated
  • Dressing Ingredients:
  • 3/4 cup Divina Extra Virgin Olive Oil
  • 1/4 cup Cavalli Classico Balsamic Vinegar
  • 2 tbsp. Bee Raw Florida Orange Blossom Honey
  • 1 tbsp. Dijon mustard
  • 1 clove garlic, finely minced
  • 1/2 tsp. kosher salt
  • 1/2 tsp. ground pepper
  • 1/4 tsp. dried thyme, crushed

  1. Balsamic Dressing:
  2. Put all the ingredients in a jar with a lid.
  3. Make sure the lid is fastened securely and shake vigorously until the dressing is fully emulsified, thickened, and smooth.
  4. Taste, and adjust the seasonings, if necessary.
  5. Store in the fridge for about 3 weeks. Give it a good shake before serving.
  6. Salad Instructions:
  7. Cook sacchetti according to package instructions, adding an extra minute doesn’t hurt.
  8. Immediately add the balsamic dressing to the warm pasta and use a silicone spatula to gently mix until well-combined.
  9. Add all remaining ingredients, mix until well-combined. Transfer to a clean bowl if desired. Serve immediately if serving warm.
  10. If serving chilled, refrigerate for 4+ hours. Before serving, you may choose to drizzle up to 1/4 cup additional balsamic dressing and toss before serving.
